Ingredients
  

  • 4 slices sourdough bread
  • 4 oz goat cheese
  • 2 tablespoons butter softened
  • 2 teaspoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme optional

Instructions  

  • Prepare the bread
  • Spread butter evenly on one side of each slice of sourdough bread.
  • Add the filling
  • Spread goat cheese on the unbuttered side of two slices of bread.
  • Drizzle honey
  • Drizzle a little honey over the goat cheese and sprinkle fresh thyme if using.
  • Assemble sandwich
  • Place the remaining slices of bread on top with the buttered side facing outward.
  • Cook the sandwich
  • Heat olive oil in a skillet over medium heat and place the sandwiches in the pan.
  • Grill until golden
