Ingredients

For the Chicken

  • 2 chicken breasts cut into small pieces or strips
  • 1 cup buttermilk
  • 1 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Oil for frying

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tablespoon sriracha use less if you want it mild
  • 1 teaspoon honey

For the Sliders

  • 8 to 10 small slider buns
  • Lettuce or cabbage for crunch
  • Pickles optional

Substitution tips:

  • Use Greek yogurt instead of mayo for a lighter sauce.
  • You can bake or air fry the chicken if you don’t want to deep fry.
  • For a gluten-free version use cornstarch or rice flour instead of regular flour.

Instructions

Step 1: Marinate the Chicken

  • Place chicken pieces in a bowl with buttermilk, salt, and pepper. Let them sit for at least 30 minutes. This keeps the chicken juicy and soft.

Step 2: Prepare the Coating

  • In another bowl, mix flour, garlic powder, and paprika. Coat each piece of marinated chicken in the flour mixture. Shake off extra flour.

Step 3: Fry or Air Fry the Chicken

  • To fry: Heat oil in a skillet over medium heat. Add chicken pieces and cook until golden brown on both sides, about 3 to 4 minutes each side.
  • To air fry: Spray chicken lightly with oil and air fry at 375°F for 12–15 minutes, turning halfway.
  • Place cooked chicken on paper towels to remove extra oil.

Step 4: Make the Bang Bang Sauce

  • Mix mayo, sweet chili sauce, sriracha, and honey in a small bowl. Stir until smooth. Taste and adjust spice or sweetness if needed.

Step 5: Assemble the Sliders

  • Lightly toast the slider buns. Spread a bit of Bang Bang sauce on the bottom bun. Add lettuce, a piece of crispy chicken, and a spoon of sauce on top. Add the top bun.
  • Serve right away while they’re warm.

Notes

📝 Notes

  • Chicken: Use crispy chicken tenders, grilled breasts, or even shredded rotisserie chicken — all work great for sliders.
  • Bang Bang Sauce: Mix mayonnaise, sweet chili sauce, and a touch of sriracha for the perfect creamy-spicy balance.
  • Buns: Soft Hawaiian rolls or brioche slider buns pair beautifully with the tangy sauce.
  • Toppings: Add shredded lettuce, cabbage slaw, or sliced pickles for crunch and freshness.
  • Make Ahead: Cook chicken and prepare the sauce ahead of time. Assemble sliders just before serving to keep them crisp.
  • Serving Idea: Great for game day, parties, or a fun family dinner — serve with fries or coleslaw.
  • Storage: Store leftover chicken and sauce separately in the fridge for up to 3 days. Reheat chicken in the oven for best texture.
