  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce

  • ¼ teaspoon red pepper flakes optional

Instructions  

1. Preheat oven

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

2. Prepare salmon

  • Place salmon fillets on baking sheet. Pat dry, then drizzle with olive oil. Season with salt and black pepper.

3. Make peach bourbon glaze

  • In a saucepan over medium heat, combine peaches, bourbon, brown sugar, soy sauce, Dijon mustard, garlic, lemon juice, smoked paprika, and red pepper flakes.
  • Simmer for 5–7 minutes, stirring occasionally. Lightly mash peaches to create a thick, chunky glaze.

4. Glaze salmon

  • Spoon peach bourbon glaze generously over each salmon fillet, reserving some for later.

5. Roast

  • Bake for 12–15 minutes, or until salmon flakes easily with a fork.
  • Optional: Broil for 1–2 minutes for a caramelized top.

6. Serve

  • Drizzle with remaining glaze and garnish with parsley and extra peach slices. Serve with lemon wedges.
