  • 12 oz pasta rotini, penne, or bowtie
  • cups cherry or grape tomatoes halved
  • 8 oz fresh mozzarella balls bocconcini, halved
  • ¼ cup extra virgin olive oil
  • Salt and black pepper to taste
  • ¼ cup fresh basil leaves sliced or torn

For the Balsamic Glaze

  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar

  • ¼ cup grated Parmesan
  • Red pepper flakes
  • Grilled chicken or shrimp
  • Avocado slices

Instructions  

Step 1: Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook pasta according to package instructions until al dente.
  • Drain and rinse briefly with cool water to stop cooking. Set aside.

Step 2: Make the Balsamic Glaze

  • In a small saucepan, combine balsamic vinegar and honey.
  • Bring to a gentle simmer over medium heat.
  • Cook for 8–10 minutes until reduced and slightly thickened.
  • Remove from heat and let cool (it thickens more as it cools).

Step 3: Assemble the Salad

  • In a large bowl, add cooked pasta, tomatoes, and mozzarella.
  • Drizzle with olive oil and season with salt and black pepper.
  • Toss gently until evenly coated.

Step 4: Finish with Basil and Glaze

  • Add fresh basil and toss lightly.
  • Drizzle balsamic glaze over the salad just before serving.
  • Garnish with Parmesan or red pepper flakes if desired.
