Ingredients

For the Meatloaf:

  • 2 pounds ground beef 80/20 works best
  • 1 cup breadcrumbs
  • 1 cup milk
  • 2 large eggs
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Glaze:

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

Instructions

1. Prepare the Oven and Pan

  • Preheat the oven to 375°F (190°C).
  • Line a loaf pan with parchment paper or lightly grease it.
  • Set it aside while you prepare the meat mixture.

2. Mix the Meatloaf

  • In a large bowl, combine ground beef, breadcrumbs, milk, eggs, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper.
  • Mix everything gently with your hands or a large spoon.
  • Don’t overmix. Too much mixing makes the meatloaf dense.

3. Shape and Bake

  • Place the meat mixture into the loaf pan. Press it lightly to shape it evenly.
  • In a small bowl, stir ketchup, brown sugar, and vinegar to make the glaze.
  • Spread half the glaze over the top.
  • Bake for 45 minutes.

4. Add More Glaze and Finish Baking

  • After 45 minutes, brush the rest of the glaze over the meatloaf.
  • Bake for another 15 to 20 minutes.
  • It’s ready when the internal temperature reaches 160°F (71°C).

  • Mix in finely diced onions or grated carrots for moisture and flavor.
  • Brush ketchup or barbecue sauce on top for a classic glaze.
  • Let meatloaf rest 10 minutes before slicing to hold its shape.
  • Store leftovers in the fridge up to 4 days or freeze up to 3 months.
  • Reheat slices in a covered dish with a splash of broth to keep moist.
