- 12 oz pasta penne, rigatoni, or fettuccine
- 2 boneless skinless chicken breasts (about 1 lb), sliced
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- 3 cloves garlic minced
- 1 5.2 oz package Boursin Garlic & Fine Herbs cheese
- ¾ cup heavy cream or half-and-half
- ½ cup reserved pasta water
- ¼ cup grated Parmesan cheese optional
- ½ teaspoon red pepper flakes optional
- Fresh parsley or basil chopped (for garnish)
Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve ½ cup pasta water, then drain.
While pasta cooks, season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
Pour in heavy cream and bring to a gentle simmer. Add Boursin cheese and stir until completely melted and smooth.
Stir in reserved pasta water gradually until sauce reaches a silky consistency. Add Parmesan cheese if using.
Return chicken to the skillet. Add drained pasta and toss until fully coated in the creamy sauce.
Adjust seasoning and sprinkle red pepper flakes if desired. Garnish with fresh herbs and serve warm.
📝 Notes
- Use garlic and herb Boursin cheese for the most classic creamy flavor.
- Boneless, skinless chicken breasts or thighs both work well.
- Cook pasta al dente so it holds up in the creamy sauce.
- Reserve some pasta water to thin the sauce if needed.
- Add spinach, mushrooms, or cherry tomatoes for extra color and nutrition.
- Freshly grated parmesan enhances richness and depth.
- Season lightly at first—Boursin cheese already contains salt.
- Store leftovers in the fridge for up to 3 days; reheat with a splash of milk or cream.
