Ingredients
  

  • 12 oz pasta penne, rigatoni, or fettuccine
  • 2 boneless skinless chicken breasts (about 1 lb), sliced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 3 cloves garlic minced
  • 1 5.2 oz package Boursin Garlic & Fine Herbs cheese
  • ¾ cup heavy cream or half-and-half
  • ½ cup reserved pasta water
  • ¼ cup grated Parmesan cheese optional
  • ½ teaspoon red pepper flakes optional
  • Fresh parsley or basil chopped (for garnish)

Instructions  

  • Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Reserve ½ cup pasta water, then drain.
  • While pasta cooks, season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  • Reduce heat to medium. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  • Pour in heavy cream and bring to a gentle simmer. Add Boursin cheese and stir until completely melted and smooth.
  • Stir in reserved pasta water gradually until sauce reaches a silky consistency. Add Parmesan cheese if using.
  • Return chicken to the skillet. Add drained pasta and toss until fully coated in the creamy sauce.
  • Adjust seasoning and sprinkle red pepper flakes if desired. Garnish with fresh herbs and serve warm.
