  • pounds boneless skinless chicken breasts or thighs
  • Thighs stay extra juicy while breasts are leaner and lighter.
  • 1 teaspoon salt divided
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional, for color and warmth
  • 2 tablespoons olive oil or butter
  • 8 ounces mushrooms sliced
  • Cremini or baby bella mushrooms work best.
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • Low-sodium preferred.
  • ¾ cup heavy cream
  • Half-and-half can be used for a lighter sauce.
  • 3 cups fresh spinach
  • Baby spinach wilts quickly and evenly.
  • ½ teaspoon Italian seasoning
  • ¼ cup grated Parmesan cheese optional but recommended

Instructions  

1. Season the Chicken

  • Pat the chicken dry with paper towels. Season both sides with salt, pepper, and paprika.

2. Sear Until Golden

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4–5 minutes per side, until golden and mostly cooked through. Remove chicken from the skillet and set aside.

3. Cook the Mushrooms

  • In the same skillet, add mushrooms. Cook for 5–7 minutes, stirring occasionally, until they release their moisture and turn golden brown.

4. Add Garlic

  • Stir in garlic and cook for 30 seconds, just until fragrant.

5. Build the Sauce

  • Pour in chicken broth, scraping the bottom of the pan to release any browned bits. Let it simmer for 2–3 minutes to reduce slightly.

6. Make It Creamy

  • Lower the heat and stir in the heavy cream and Italian seasoning. Simmer gently for 3–4 minutes until slightly thickened.

7. Add Spinach

  • Stir in spinach, allowing it to wilt into the sauce, about 1–2 minutes.

8. Finish the Chicken

  • Return chicken to the skillet, spooning sauce over the top. Simmer for another 5 minutes, until chicken is fully cooked and the sauce is rich and creamy.

9. Optional Cheese Finish

  • Sprinkle Parmesan over the skillet and stir gently until melted.
