Instructions  

Step 1: Cook the Chicken

  • Heat olive oil and butter in a large skillet over medium heat.
  • Season chicken with salt and pepper.
  • Cook until golden on both sides, about 5–6 minutes per side.
  • Remove from the pan and set aside on a plate.

Step 2: Cook the Mushrooms and Garlic

  • In the same skillet, add sliced mushrooms.
  • Cook until soft and brown, about 5 minutes.
  • Add minced garlic and cook for 1 minute more. Don’t let it burn.

Step 3: Toast the Orzo

  • Add dry orzo to the pan with mushrooms.
  • Stir for 1–2 minutes until the orzo is lightly toasted. This step adds flavor.

Step 4: Simmer and Add Liquid

  • Pour in chicken broth. Scrape up any bits from the bottom of the pan.
  • Lower the heat to medium-low.
  • Simmer for about 10 minutes, stirring often so the orzo doesn’t stick.

Step 5: Add Cream and Spinach

  • Stir in the cream and Parmesan.
  • Add fresh spinach. It’ll wilt quickly.
  • Return the chicken to the pan. Let everything cook for 2–3 minutes until heated through and creamy.
