Ingredients
  

  • 4 slices bread
  • Sourdough brioche, or thick-cut white bread works best. Avoid very thin slices.
  • 1 tablespoon butter softened
  • Or mayonnaise for extra crispiness.
  • 1 cup shredded cheese
  • Sharp white cheddar is ideal. Gruyère fontina, or mozzarella also work well.
  • ½ cup fresh blueberries
  • Frozen blueberries can be used but thaw and pat dry first.
  • 1 –2 teaspoons honey optional
  • For extra sweetness especially if blueberries are tart.
  • Pinch of salt
  • Enhances the sweet-savory contrast.

Instructions  

1. Prep the Bread

  • Lay out the bread slices on a cutting board. Spread butter or mayo evenly on one side of each slice. This will be the outside of your sandwich.

2. Build the Sandwich

  • Flip two slices butter-side down. Sprinkle a layer of cheese evenly across the bread. Scatter blueberries over the cheese, keeping them mostly toward the center to prevent spillage.
  • If using honey, drizzle lightly over the blueberries. Add a pinch of salt.
  • Top with the remaining cheese, then place the second slice of bread on top, butter-side facing out.

3. Heat the Pan

  • Set a skillet or griddle over medium-low heat. Let it warm fully before adding the sandwiches.

4. Cook Until Golden

  • Place the sandwiches in the pan and cook for 3–4 minutes per side. Press gently with a spatula to help everything melt together.
  • Flip carefully once the bottom is deeply golden and crisp.

5. Finish and Serve

  • Once both sides are crisp and the cheese is fully melted, remove from the pan. Let rest for 1 minute before slicing. This helps the filling set slightly.
    Slice in half and serve warm.
