Crockpot French Dip Sandwich

Ingredients
  

  • 3 pounds beef chuck roast
  • 2 cups beef broth
  • 1 packet onion soup mix
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic minced
  • 1 onion sliced
  • 6 hoagie rolls or French rolls
  • 6 slices provolone cheese

  • sautéed mushrooms
  • caramelized onions
  • sliced bell peppers
  • Swiss cheese instead of provolone

Instructions  

  • Add the beef to the crockpot
  • Place the chuck roast in the bottom of the slow cooker.
  • Add onions and garlic
  • Scatter the sliced onion and minced garlic around the roast.
  • Pour in the broth
  • Add beef broth, onion soup mix, and Worcestershire sauce.
  • Cook the beef
  • Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the beef is tender and easy to shred.
  • Shred the meat
  • Remove the roast and shred it using two forks.
  • Return to the juices
  • Place the shredded beef back in the slow cooker and let it soak in the broth for about 10 minutes.
  • Toast the rolls
  • Slice the rolls and lightly toast them in the oven or skillet.
  • Assemble the sandwiches
  • Add shredded beef to each roll and top with a slice of provolone cheese.
  • Melt the cheese
  • Place the sandwiches under the broiler for 1–2 minutes until the cheese melts.
  • Serve with au jus
  • Pour the crockpot juices into small bowls and serve alongside the sandwiches for dipping.
