Ingredients
  

  • 2 cups liquid egg whites or 10 to 12 egg whites
  • 1/2 cup cottage cheese or shredded cheese
  • 1/3 cup chopped bell peppers
  • 1/3 cup chopped spinach
  • 1/4 cup cooked turkey bacon or chicken sausage
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: garlic powder onion powder, or paprika

Instructions  

Reheat before eating.

  • Warm a bite in the microwave for about 20 seconds, or 30 seconds if cold from the fridge.

Heat the oven to 350°F.

  • This helps the bites cook evenly and set fast.

Grease a muffin pan.

  • Use nonstick spray or a little oil so the bites don’t stick.

Whisk the egg whites.

  • Pour the egg whites into a bowl. Add salt, pepper, and cheese. Whisk until smooth.

Prep your fillings.

  • Chop spinach, peppers, mushrooms, or cooked turkey bacon. Pat wet veggies dry.

Stir the fillings into the egg mix.

  • Mix gently so the veggies and meat spread evenly.

Fill the muffin cups.

  • Pour the mixture into each cup until it’s about three-quarters full. Leave room for the eggs to rise.

Bake for 18 to 20 minutes.
