Prepare the Beef and Vegetables
Pat the beef strips dry with a paper towel. This helps them brown nicely instead of steaming. Slice the onions and mushrooms so they cook evenly.
Brown the Beef
Heat olive oil in a large skillet over medium high heat. Sear the beef strips quickly until just browned on the outside, about 1-2 minutes per side. Remove from the pan and set aside. Don’t overcook at this stage the beef will finish cooking later.
Cook the Vegetables
Add butter to the skillet, then sauté onions and mushrooms until soft and golden. Stir in the minced garlic and cook for 30 seconds until fragrant.
Make the Sauce
Sprinkle flour over the vegetables and stir well. Slowly pour in the beef broth while whisking to prevent lumps. Add Worcestershire sauce and bring the mixture to a gentle simmer.
Add the Sour Cream and Beef
Lower the heat and stir in the sour cream until smooth. Return the beef to the skillet, mix well, and cook for 2-3 more minutes until heated through. Season with salt and pepper to taste.
- For extra flavor, add a splash of Worcestershire sauce.
- Use fresh mushrooms for the best taste and texture.
- Substitute Greek yogurt for sour cream for a lighter option.
