Ingredients
  

  • 1 lb beef sirloin or tenderloin thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion finely chopped
  • 8 oz mushrooms sliced
  • 2 cloves garlic minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp all purpose flour
  • 1 cup sour cream full-fat for best flavor
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)
  • Egg noodles mashed potatoes, or rice for serving

Instructions  

  • Prepare the Beef and Vegetables
  • Pat the beef strips dry with a paper towel. This helps them brown nicely instead of steaming. Slice the onions and mushrooms so they cook evenly.
  • Brown the Beef
  • Heat olive oil in a large skillet over medium high heat. Sear the beef strips quickly until just browned on the outside, about 1-2 minutes per side. Remove from the pan and set aside. Don’t overcook at this stage the beef will finish cooking later.
  • Cook the Vegetables
  • Add butter to the skillet, then sauté onions and mushrooms until soft and golden. Stir in the minced garlic and cook for 30 seconds until fragrant.
  • Make the Sauce
  • Sprinkle flour over the vegetables and stir well. Slowly pour in the beef broth while whisking to prevent lumps. Add Worcestershire sauce and bring the mixture to a gentle simmer.
  • Add the Sour Cream and Beef
  • Lower the heat and stir in the sour cream until smooth. Return the beef to the skillet, mix well, and cook for 2-3 more minutes until heated through. Season with salt and pepper to taste.
