Ingredients
  

For the Cake:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 cups grated carrots about 3 medium carrots
  • Optional: ½ cup chopped walnuts or raisins

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions  

  • Step 1: Mix Dry Ingredients
  • In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Step 2: Combine Wet Ingredients
  • In a separate bowl, mix oil, eggs, brown sugar, and granulated sugar until smooth.
  • Step 3: Combine Everything
  • Add the dry ingredients to the wet mixture and stir until just combined. Fold in the grated carrots and optional walnuts or raisins.
  • Step 4: Bake
  • Pour batter into a greased 9×13-inch pan. Bake at 350°F (175°C) for 35–40 minutes, or until a toothpick comes out clean. Let it cool completely before frosting.
