  • 1 15-ounce can red enchilada sauce
  • 1 cup canned black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions  

  • Heat your oven to 350°F. Grease a baking dish.
  • Add chicken, rice, enchilada sauce, beans, corn, cheese, and spices to a large bowl. Stir well.
