Ingredients
  

For the blondie base:

  • Brown sugar: 1 cup 200 g, packed
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • All-purpose flour: 1 1/2 cups 190 g
  • Baking powder: 1/2 teaspoon
  • Salt: 1/4 teaspoon
  • Dried cranberries: 1 cup 120 g
  • White chocolate chips or chunks: 1 cup 175 g

For the cream cheese frosting:

  • Cream cheese: 4 oz 115 g, softened
  • Unsalted butter: 1/4 cup 57 g, softened
  • Powdered sugar: 1 cup 120 g
  • Vanilla extract: 1/2 teaspoon

Instructions  

Step 1: Prepare the oven and pan

  • Preheat your oven to 350°F (175°C).

Step 2: Make the blondie base

  • In a medium bowl, whisk together 1/2 cup melted butter and 1 cup brown sugar until smooth.
  • Beat in 2 eggs and 1 teaspoon vanilla extract.
  • In another bowl, mix 1 1/2 cups flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  • Gradually fold the dry ingredients into the wet mixture.
  • Fold in 1 cup dried cranberries and 1 cup white chocolate chips.

Step 3: Bake the base

  • Spread the batter evenly in the prepared pan.
  • Bake for 25–30 minutes, or until a toothpick inserted in the center comes out mostly clean.
  • Let it cool completely in the pan before adding frosting.

Step 4: Make the cream cheese frosting

  • In a bowl, beat 4 oz softened cream cheese with 1/4 cup softened butter until smooth.
  • Gradually add 1 cup powdered sugar and 1/2 teaspoon vanilla extract.
  • Spread frosting evenly over the cooled blondie base.

Step 5: Add the finishing touches

  • Melt a few tablespoons of white chocolate and drizzle over the frosting.
  • Sprinkle chopped pecans or walnuts if desired.
  • Chill for at least 30 minutes to set before slicing.
