Ingredients
  

For the Filling

  • 2 cups shredded birria beef or slow-cooked beef with adobo spices
  • 1 cup shredded cheese Monterey Jack, mozzarella, or Chihuahua cheese
  • ½ cup diced onions
  • 2 tablespoons chopped fresh cilantro
  • Optional: ½ cup sautéed peppers or mushrooms for extra flavor

For the Egg Rolls

  • 8 –10 egg roll wrappers
  • 1 –2 tablespoons olive oil for brushing if baking
  • Cooking oil for frying optional if deep-frying

For the Dipping Sauce

  • 1 cup birria consommé or beef broth with a splash of adobo sauce
  • 1 teaspoon lime juice
  • Optional: hot sauce or chopped chiles for heat

Instructions  

Step 1: Prepare the Filling

  • In a medium bowl, combine shredded birria beef, cheese, diced onions, cilantro, and optional sautéed vegetables. Mix until evenly combined.

Step 2: Assemble the Egg Rolls

  • Place an egg roll wrapper on a flat surface with a corner pointing toward you. Spoon 2–3 tablespoons of filling near the bottom corner. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with a dab of water.

Step 3: Cook the Egg Rolls

    Option 1: Baking

    • Preheat oven to 425°F (220°C). Place egg rolls on a parchment-lined baking sheet. Brush lightly with olive oil. Bake 15–20 minutes, turning halfway through, until golden brown and crispy.

    Option 2: Frying

    • Heat 2 inches of oil in a deep skillet to 350°F (175°C). Fry egg rolls 2–3 minutes per side until golden and crisp. Drain on paper towels.

    Step 4: Make the Dipping Sauce

    • In a small saucepan, heat consommé with lime juice and optional hot sauce until warm. Serve alongside egg rolls for dipping.

    Step 5: Serve

    • Plate the egg rolls hot with dipping sauce. Garnish with fresh cilantro or a sprinkle of lime juice if desired. Enjoy immediately for the best crunch and flavor.
