Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 small onion diced
  • 3 garlic cloves minced
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes optional
  • 2 tbsp tomato paste
  • 4 cups beef or chicken broth
  • 1 can 28 oz crushed tomatoes
  • 8 –10 lasagna noodles broken into pieces
  • Salt & pepper to taste

For topping:

  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella
  • Grated Parmesan and fresh basil

Instructions  

  • Sauté aromatics: In a large soup pot, heat a splash of oil. Sauté onion and garlic until fragrant.
  • Brown the meat: Add ground beef or sausage and cook until browned. Drain excess fat.
  • Build the base: Stir in tomato paste, crushed tomatoes, broth, and seasonings.
  • Simmer & cook pasta: Bring to a boil. Add broken lasagna noodles and simmer until tender (about 10–12 mins).
  • Finish & serve: Taste and adjust seasoning. Ladle into bowls and top each with ricotta, mozzarella, Parmesan, and fresh basil.
