Instructions  

Step 1: Make the Crust

  • Press firmly into a parchment-lined 9×9-inch pan.
  • Chill in the fridge while preparing the filling.

Step 2: Prepare the Cheesecake Filling

  • Beat softened cream cheese until smooth.
  • Add powdered sugar and vanilla. Mix well.
  • In a separate bowl, whip heavy cream to stiff peaks.
  • Gently fold whipped cream into cream cheese mixture.

Step 3: Assemble the Bars

  • Spread the cheesecake filling evenly over the crust.
  • Smooth the top with a spatula.
  • Refrigerate while preparing the strawberry topping.

Step 4: Make the Strawberry Topping

  • Add strawberries, sugar, and lemon juice to a saucepan.
