Easy Pierogi Casserole with Sausage

Ingredients
  

  • 24 oz 680g frozen potato & cheese pierogies
  • 1 lb 450g smoked kielbasa or smoked sausage sliced into rounds
  • 1 can 10.5oz/298g condensed cream of mushroom soup
  • ½ cup 120g sour cream
  • 2 cups about 8oz/226g shredded cheddar cheese divided (use 1 cup inside, 1 cup for topping)
  • 1 medium onion about 110g, thinly sliced
  • 1 tablespoon olive oil
  • ½ cup 120 ml milk to thin sauce, optional
  • 2 tablespoons chopped fresh parsley optional for garnish
  • Salt and freshly ground black pepper to taste

Instructions  

Step 1: Cook the Sausage and Onions

  • Slice sausage into bite sized pieces. Heat a large skillet over medium heat. Add the sausage and cook until browned, about 5 minutes. Add the chopped onion and garlic. Stir until the onion softens.

Step 2: Prepare the Baking Dish

  • Grease a 9×13-Inch baking dish with butter or nonstick spray. Spread half of the frozen pierogi in an even layer.

Step 3: Layer the Casserole

  • Top the pierogi with half the sausage and onion mixture. Add a few spoonfuls of sour cream and sprinkle with shredded cheese. Repeat the layers until all ingredients are used.

Step 4: Bake

  • Preheat oven to 375°F (190°C). Cover the dish with foil and bake for 25 minutes. Remove the foil and bake another 10 minutes until the cheese melts and bubbles.

Step 5: Serve

  • Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley or green onions if you like. Serve warm with a side salad or roasted vegetables.
