French Dip Tortilla Roll Ups

Ingredients
  

Main Ingredients (with measurements):

  • 6 medium flour tortillas
  • 12 –14 oz thinly sliced roast beef
  • 6 slices provolone or Swiss cheese
  • 2 tbsp melted butter
  • 1 tsp garlic powder
  • 1 packet au jus mix or 1 ½ cups beef broth

Optional Add-Ins:

  • ½ cup caramelized onions
  • 6 –8 thin jalapeño slices
  • ¼ cup shredded cheddar cheese

You’ll also need:

  • Baking sheet
  • Parchment paper
  • Small saucepan

Quick Ingredient Note:

  • If you don’t have an au jus packet heat 1 ½ cups beef broth with ½ tsp soy sauce, ½ tsp Worcestershire sauce, and a pinch of black pepper.

Instructions  

1. Prep the Oven and Pan

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or foil for easy cleanup.

2. Assemble the Roll Ups

  • Lay out the tortillas on a clean surface.
  • Place a slice of roast beef and a slice of cheese on each one.
  • Roll tightly, just like you’d roll a burrito, but don’t fold the ends.
  • Place them seam-side down on the baking sheet so they stay rolled.

3. Brush with Butter

  • Melt a few tablespoons of butter. Stir in a pinch of garlic powder and a bit of salt.
  • Brush the tops of each roll up with the butter mix.
  • This helps them brown and adds flavor.

4. Bake Until Golden

  • Bake for 10–12 minutes or until the cheese melts and the tortillas start to brown.
  • Watch them near the end so they don’t get too crisp.

5. Make the Au Jus Sauce

  • While the roll ups bake, prepare your dipping sauce.
  • Add 1 au jus seasoning packet to 2 cups of water or beef broth in a small pan.
  • Bring to a simmer and stir until smooth and slightly thickened.

6. Serve Warm

  • Slice each roll up in halves or thirds for easier dipping.
  • Serve with a small bowl of warm au jus on the side.
