Ingredients
  

  • 1 pound ground beef 80/20 for a juicy but not greasy filling
  • 6 slices bacon cooked crisp and chopped
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 tablespoons butter melted
  • 2 garlic cloves minced
  • 1 tablespoon chopped parsley
  • 8 to 10 medium flour tortillas or 2 cans crescent roll dough

Instructions  

1. Cook the bacon

  • Place the bacon in a pan over medium heat.
  • Cook until the strips turn crisp.
  • Set them on a paper towel to drain, then chop into small pieces.

2. Cook the ground beef

  • Add the ground beef to the same pan.
  • Break it up with a spatula.
  • Cook until no pink remains.
  • Drain the excess fat so the rollups don’t become soggy.

3. Season the filling

  • Add the chopped bacon back into the pan with the beef.
  • Stir in salt, pepper, or any simple seasoning you like.
  • Turn off the heat and let the mixture cool slightly.

4. Make the garlic butter

  • Melt the butter in a small bowl.
  • Mix in the minced garlic and chopped parsley.
  • Brush a thin layer on each tortilla or crescent sheet.
  • This adds flavor and helps the rollups brown.

5. Add the cheese

  • Sprinkle cheddar and mozzarella over each tortilla or dough sheet.
  • Use enough to cover the surface but leave a small border at the edges.
  • This helps the rollups seal better.

6. Add the beef mixture

  • Spoon a thin line of beef and bacon along one side of each tortilla.
  • Don’t overfill. Too much filling will make rolling hard and messy.

7. Roll them up

  • Start from the filled edge.
  • Roll tightly to keep everything in place.
  • If using crescent dough, pinch any open seams.

8. Brush with more garlic butter

  • Place the rollups seam-side down on a lined baking sheet.

9. Bake
