Ground Beef and Sweet Potato Skillet Recipe

Ingredients
  

  • 1 lb ground beef
  • 2 medium sweet potatoes peeled and diced into ½-inch cubes
  • 1 small onion diced
  • 1 red bell pepper diced
  • 2 cloves garlic minced
  • 2 tbsp olive oil or avocado oil
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp chili powder
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions  

  •  Cook the Sweet Potatoes
    In a large skillet, heat 1 tablespoon of oil over medium heat. Add diced sweet potatoes, sprinkle lightly with salt, and cook for 8–10 minutes, stirring occasionally, until they start to soften. Remove and set aside.
  • Brown the Beef
    Add the remaining oil to the skillet. Cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat if needed.
  • Add Vegetables and Seasoning
    Stir in onion, bell pepper, and garlic. Cook for 3–4 minutes until vegetables are tender. Add smoked paprika, cumin, chili powder, salt, and pepper, and stir to coat.
  •  Bring It All Together
    Return the sweet potatoes to the skillet. Stir well and cook for another 5–7 minutes, or until the potatoes are tender and the flavors have combined.
  • Serve
    Garnish with fresh parsley and serve warm.
