Ingredients
  

  • 1 large bunch curly kale about 5–6 cups chopped, stems removed
  • 1 large ripe avocado diced
  • 2 tablespoons fresh lemon juice about 1 lemon
  • 1 tablespoon lemon zest optional
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Optional Add-Ins

  • ¼ cup shaved Parmesan cheese
  • 2 tablespoons toasted pine nuts or sliced almonds
  • ¼ cup dried cranberries
  • 1 tablespoon honey optional, for slight sweetness

Instructions  

  • Wash and thoroughly dry the kale. Remove thick stems and chop leaves into bite-sized pieces. Place in a large mixing bowl.
  • Drizzle lemon juice and olive oil over the kale. Sprinkle with sea salt.
  • Using clean hands, massage the kale for 2–3 minutes until leaves soften, darken in color, and reduce slightly in volume.
  • Add diced avocado and gently toss to combine. For a creamier texture, mash some of the avocado into the salad.
  • Add black pepper, lemon zest, and any optional toppings. Toss lightly and serve immediately.
