  • 2 large eggs

  • 1 tablespoon lemon zest

Instructions  

1. Preheat and Prep

  • Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang for easy removal.

2. Make the Oat Crumble

  • In a large bowl, mix oats, flour, brown sugar, baking soda, and salt. Pour in melted butter and stir until the mixture is evenly moistened and crumbly.

3. Form the Crust

  • Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan to create an even layer.

4. Bake the Crust

  • Bake for 12–15 minutes, until lightly golden and set. Remove from oven and let cool slightly.

5. Prepare the Lemon Filling

  • In another bowl, whisk together granulated sugar and flour. Add eggs, lemon juice, and zest, whisking until smooth.

6. Assemble the Bars

  • Pour the lemon filling evenly over the warm crust. Sprinkle the remaining oat mixture over the top, gently pressing it down slightly.

7. Bake Again

  • Return to the oven and bake for 22–25 minutes, or until the top is golden and the filling is set.

8. Cool and Slice

  • Let the bars cool completely in the pan. For clean slices, chill for 1–2 hours before cutting.
