Ingredients

Beef:

  • 3 –4 lb beef roast ribeye, top sirloin, or chuck roast
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 –2 tbsp olive oil for searing

Garlic Herb Butter:

  • 1/2 cup unsalted butter softened
  • 4 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

Step 1: Prepare the Beef

  • Pat the roast dry with paper towels. This helps the meat brown properly. Rub salt and pepper evenly over the surface. Let it sit at room temperature for 30 minutes. This step ensures even cooking.

Step 2: Make the Garlic Herb Butter

  • In a small bowl, mix softened butter with garlic, parsley, thyme, rosemary, salt, and pepper. Stir until smooth. Set aside. You can make this ahead of time and store it in the fridge.

Step 3: Sear the Roast

  • Heat olive oil in a large skillet over medium-high heat. Once hot, sear the roast on all sides until it forms a golden-brown crust, about 2–3 minutes per side. This locks in juices and adds flavor.

Step 4: Roast in the Oven

  • Preheat your oven to 375°F (190°C). Place the seared roast on a rack in a roasting pan. Roast until it reaches your desired doneness:
  • Medium-rare: 130°F (55°C)
  • Medium: 140°F (60°C)
  • Medium-well: 150°F (65°C)
  • Use a meat thermometer for accuracy. Cooking time varies by size and shape, usually 60–90 minutes for a 3–4 lb roast

Step 5: Rest the Meat

  • Remove the roast from the oven. Tent it loosely with foil and let it rest for 10–15 minutes. Resting keeps the juices inside.

Step 6: Serve with Garlic Herb Butter

  • Slice the roast against the grain for tenderness. Spoon garlic herb butter over each slice. Let it melt naturally. Serve immediately with your favorite sides.
