Ingredients
  

  • 2 medium delicata squash halved, seeded, and sliced into half-moons
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon fresh thyme or rosemary optional
  • 1 cup crispy fried onions store-bought or homemade
  • Fresh parsley for garnish

Instructions  

Step 1: Slice & Season

  • Preheat oven to 400°F (200°C).
  • Cut delicata squash in half, scoop out seeds, and slice into half-moon shapes.
  • Toss with olive oil, salt, pepper, and herbs (if using).

Step 2: Roast Until Golden

  • Spread slices evenly on a baking sheet lined with parchment paper.
  • Roast for 25–30 minutes, flipping halfway, until caramelized and tender.

Step 3: Add Crispy Onions

  • In the last 5 minutes of roasting, sprinkle crispy onions over the squash or add just before serving for maximum crunch.
