For the Salad

  • 1 pound fresh asparagus trimmed
  • ¼ cup shaved or grated Parmesan cheese
  • ¼ cup toasted almonds or pine nuts optional
  • 2 tablespoons fresh herbs parsley, basil, or dill, chopped

For the Lemon Dressing

  • 3 tablespoons extra-virgin olive oil
  • tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 small clove garlic finely grated or minced
  • ½ teaspoon honey or maple syrup optional
  • Salt and freshly ground black pepper to taste

Instructions  

Step 1: Prepare the Asparagus

  • Wash the asparagus and snap off the woody ends. Using a vegetable peeler or mandoline, shave the asparagus lengthwise into thin ribbons. Rotate the stalk as you shave to get even slices.
  • Place the shaved asparagus in a large bowl.

Step 2: Make the Lemon Dressing

  • In a small bowl or jar, whisk together olive oil, lemon juice, lemon zest, garlic, honey (if using), salt, and pepper until well combined.
  • Taste and adjust seasoning as needed.

Step 3: Toss the Salad

  • Pour the dressing over the shaved asparagus. Toss gently to coat evenly. Let the salad rest for 5–10 minutes to allow the asparagus to soften slightly.

Step 4: Finish and Serve

  • Top with shaved Parmesan, toasted nuts, and fresh herbs just before serving. Toss lightly and serve immediately.
