Instructions  

  • Step 1: Roast the Sweet Potatoes

  • Place directly on the oven rack or on a baking sheet. Roast for 40–45 minutes, until tender when pierced.

Step 2: Prepare the Buffalo Chicken

  • While potatoes roast, add shredded chicken to a skillet over medium heat.
  • Pour in buffalo sauce and sprinkle garlic powder, smoked paprika, salt, and pepper.
  • Stir and cook for 5–7 minutes, until heated through and well coated.

Step 3: Slice and Fluff

  • Once sweet potatoes are done, let them cool slightly.
  • Slice each potato lengthwise and gently fluff the inside with a fork, creating space for filling.

Step 4: Stuff the Potatoes
