Ingredients

  • 2 cups water
  • 2 black tea bags or 2 teaspoons loose-leaf black tea
  • 1 cup milk whole milk recommended, see substitutions below
  • 2 tablespoons honey or maple syrup adjust to taste
  • 1 cinnamon stick
  • 4 green cardamom pods lightly crushed
  • 4 whole cloves
  • 1- inch piece fresh ginger sliced (or ½ teaspoon ground ginger)
  • ¼ teaspoon ground nutmeg optional
  • ½ teaspoon vanilla extract optional, for extra warmth

Instructions

1. Simmer the spices

  • In a small saucepan, combine the water, cinnamon stick, cardamom pods, cloves, and ginger. Bring to a gentle boil, then reduce heat and simmer for 5–7 minutes. This allows the spices to fully infuse the water.

2. Brew the tea

  • Add the black tea bags to the saucepan and simmer for another 2–3 minutes. Remove from heat and let steep briefly for a bold flavor.

3. Add milk and sweetener

  • Pour in the milk and return the saucepan to low heat. Stir in the honey or maple syrup and gently warm the mixture without boiling.

4. Strain and finish

  • Remove from heat and strain the chai into mugs. Stir in vanilla extract if using. Taste and adjust sweetness as needed.

5. Serve warm

  • Enjoy as-is, or top with a sprinkle of cinnamon or nutmeg for a cozy finishing touch.
