Royal Icing

  • 5 –6 tablespoons warm water
  • ½ teaspoon vanilla or almond extract

Instructions  

1. Make the Cookie Dough

  • Cream butter and sugar until light and fluffy. Add egg and vanilla, mixing until smooth. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix dry ingredients into wet until just combined.

2. Chill the Dough

  • Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour. This step is key for clean edges.

3. Roll & Cut

  • Roll dough on a lightly floured surface to ¼-inch thickness. Cut into heart shapes and place on parchment-lined baking sheets.

4. Bake

  • Bake at 350°F (175°C) for 9–11 minutes, just until set. Do not brown. Cool completely before decorating.

5. Make the Royal Icing

  • Beat powdered sugar, meringue powder, water, and extract until glossy. Adjust water to reach desired consistency.

6. Decorate

  • Outline cookies with thicker icing, then flood with slightly thinner icing. Add sprinkles while wet.

7. Set

  • Let cookies dry at room temperature for 6–8 hours or overnight until icing is fully set.
